Potato Meat Curry

Serves 2
Ingredients
- 175g meat, diced
- Pounded --> (½ large onion, 2 cloves garlic, 1 red chilli, ½cm sliced ginger)
- 2 tbsp white vinegar
- 1 dessertspoon curry powder
- ½ tsp tumeric powder
- ¼ tsp salt
- 2 tbsp oil
- ½ large onion, sliced
- 1 small potato, diced
- 175 ml water
Garnish
- Chopped coriander leaves
- Fried onion
Method
- Mix the pounded ingredients, vinegar, curry powder, tumeric powder and salt
- Heat oil in a saucepan. Fry the sliced onion until light brown
- Add pounded mixture. Fry until fragrant
- Add meat, potato and water. Bring to the boil. Cover the saucepan and simmer until meat is tender
- Garnish and serve hot with rice
