Singapore Chicken Curry

Ingredients
- 2 chicken thighs, each cut into two
- ½ large onion, sliced thinly
- Pounded --> (4 shallots, 1 green chilli, 2 cloves garlic, ½cm ginger)
- 1 tbsp curry powder
- 1 tsp ground coriander
- 1½ tbsp oil
- 1 large ripe tomato, chopped
- 200ml water
- ½ tsp salt
Garnish
Method
- Mix pounded ingredients with curry powder and ground coriander
- Heat oil in saucepan. Fry sliced onion until golden brown. Drain the fried onion and dish onto a plate
- Add the pounded mixture and fry until fragrant
- Add tomatoes and chicken. Stir for a while
- Add water and salt. Bring to the boil. Cover and simmer until chicken is tender
- Add the fried onion. Mix well
- Garnish and serve with hot rice or bread
