Omelette Curry

Serves 2
Ingredients
- 2 eggs, beaten with ¼ tsp salt
- 2 tbsp oil
- ¼ large onion, sliced
- 1 red chilli, sliced, with seeds removed
- 2 shallots, sliced
- 1 dessertspoon curry paste
- 200g grated coconut for 100ml thick milk, 250ml thin milk
- ½ tsp salt
Method
- Heat 1 tbsp oil. Fry onion until light brown
- Add beaten eggs and chilli. Cook until one side is light brown
- Roll omelette and cut into think slices (2cm)
- Heat remaining oil. Fry shallots until light brown
- Add curry paste. Fry until fragrant
- Add thin coconut milk and salt. Mix well and simmer for 10 min
- Add thick coconut milk and bring to the boil. Simmer for 5 min
- When gravy is thick, add the omelette slices. Cook for another minute
