Baked Scallops with Cilantro
vegetable oil spray
1 pound of scallops
1/2 cup nonfat buttermilk (or 1/2 cup low fat milk and 1 tsp. lemon juice)
3 tbsps. snipped fresh cilantro
2 tbsps. lime juice
1/4 tsp. pepper
1/2 cup plain breadcrumbs
Preheat oven to 400 degrees.
Lightly spray a 9-inch square baking dish with vegetable oil spray.
Rinse scallops and dry with paper towels.
Mix together buttermilk, cilantro, lime juice, pepper and salt to taste in a small, shallow bowl.
Soak scallops for 15 minutes.
Put bread crumbs on a plate or in a shallow bowl.
Roll scallops in bread crumbs and shake off excess.
Arrange scallops in a single layer in the baking dish.
Lightly spray scallops with vegetable oil spray.
Bake for 10 to 13 minutes, or until scallops are opaque.
To serve, sprinkle scallops with cilantro leaves.
