Fast sombrero meatballs

500g minced beef
3 tbs rolled oats
35g sachet taco seasoning mix
1 clove garlic, crushed 1egg
1 small onion, diced
2 tbs parsley, chopped
3 cups pureed tomatoes
2 stalks celery, finely sliced
1 small green capsicum, deseeded, sliced
Method '
Combine mince, rolled oats, taco seasoning, garlic, egg, onion and parsley. Clean, wet hands are best for mixing well. The mixture should be moist. Shape mince into about 18 balls. Bring pureed tomatoes to simmering in a wide pan. Drop in meat balls, one at a time, gently shaking the pan now and then to spread evenly in the tomatoes. Cover. Simmer gently 10 mins. Remove lid, shake the pan gently to turn meatballs. Add celery and capsicum to pan. Simmer for further 10 mins. Serve over spaghetti or spiral pasta.
