Fish and potato curry

Serves 4
1 tbs vegetable oil
2 tbs green curry paste 2 brown onions, diced
2 potatoes, peeled, cubed, part-cooked
1 green chilli, deseeded, sliced
2 cloves garlic, chopped 1 red capsicum, sliced
1 zucchini, sliced diagonally 400g can coconut milk 500g diced
boneless fish fillets
Cooked jasmine rice
spring onion to serve
Method
Heat oil in large saucepan. Add curry paste, onion, potatoes, chilli and garlic. Cook 3 mins. Add capsicum, zucchini and coconut milk. Cover. Cook 5 mins or until vegetables are just tender. Add diced fish. Cover. Cook 5 mins. Serve with rice, garnished with sliced onions.
