US style fried rice
1/3 cup brown rice
1 egg, lightly beaten
1/2 teaspoon ginger, grated
1 clove garlic, crushed
60g lean leg ham, chopped
1/2 cup baby corn kernels
80g green beans, chopped
1/4 red capsicum, chopped
1 spring onion, chopped
2 teaspoons soy sauce
2 teaspoons hoisin sauce
3 teaspoons rice wine vinegar
1. Cook rice according to instructions on the packet.
2. Heat a small non-stick frypan coated with cooking spray to medium. Add egg; cook for 15 seconds or until set. Remove from pan; chop roughly.
3. Re-spray pan. Add ginger, garlic, ham, corn, beans and capsicum; stir-fry for 3 minutes or until vegetables are tender.
4. Add rice, egg, spring onion, sauces and vinegar; stir-fry until hot and serve. hint For even cooking, chop beans and capsicum to the same size.
