6 eggs 1/4 cup milk or water 1/4 cup chopped Canadian bacon or ham 2 tablespoons margarine 1 8 oz can DOLE® Crushed Pineapple -- drained 2 tablespoons chopped green onion 1 13 oz package sandwhich size English muffins -- (4 pack), split and toasted
Beat together eggs and milk in medium bowl, until blended. Set aside.
Cook Canadian bacon in hot margarine, over medium heat in large skillet, until bacon is lightly browned. Stir in egg mixture and pineapple. Scramble until desired doneness, stirring constantly. Stir in green onion.
Spoon egg mixture onto muffins. Serve with cantaloupe slices and grapes, if desired. Serve immediately.
