If a girl is being casual friends with you, or a girl who is really interested in you (ie u got chance).
Sadly, I feel that I'm sorta lacking in this very notion of the 6th sense...I'm unable to figure their actions out.

Hmm... maybe try to take note of her body language while you are out with her? i.e when you are talking to her, how does she responds? Does she give you a random call or sms for no particular reason and just starts asking you how have you been?
The list can go down... just be a little more observant will do... no need for sixth sense to be ard though... Time can tell if she is interested in you

I much prefer things direct.
But I think if the girl is very obliging and willing to do alot of things/favours for you, way past what a normal friend would do, then there's a chance she likes you.
e.g. always being able to go out with you when you ask her, even cancelling previous appointments shows that you're a priority. Yeah agree too, sometimes you get mixed signals or you read too much into things becuase you WANT her to like you.
