Personally find David Eddings and Terry Goodkind not bad, though the writing is abit simple.

As long as the story is enchanting and the writing is good enough to draw me into the writer's world, I'll think it's a great fantasy.
Anywayz, personally my preference in this genre would be books by Marion Zimmer Bradley, Terry Brooks and Terry Goodkind
