Serves: 6 to 8
Ingredients:
1 large leek, white and light green parts sliced thin crosswise
2 medium carrots, peeled and cut into a small dice
2 small onions, peeled and cut into a small dice
2 medium celery stalks, trimmed can cut into small dice
2 large red potatoes cut into medium dice
1 medium zucchini, trimmed and cut into medium dice
3 cups stemmed spinach leaves, cut into thin strips
1 can (28-ounces) whole tomatoes packed in juice, drained, and chopped
8 cups water
1 Parmesan cheese rind, about 5 x 2 inches
Salt
1 can (15 ounces) cannellini beans, drained and rinsed
¼ cup basil pesto
1. Bring vegetables, tomatoes, water, cheese rind, and 1 teaspoon salt to boil in a soup kettle or pot. Reduce heat to medium-low; simmer, uncovered and stirring occasionally, until vegetables are tender but still hold their shape, about 1 hour. The soup can be refrigerated in an airtight container for 3 days or frozen for 1 month. Defrost if necessary and reheat before proceeding with recipe.
2. Add beans and cook just until heated through, about 5 minutes. Remove pot from heat. Remove and discard cheese rind. Stir in pesto (or rosemary garlic mixture). Adjust seasonings, adding pepper and more salt, if necessary. Ladle soup into bowls and serve immediately.

i dun like the canned soup, not tat fantastic leh
i tot juz beef stock, add carrot, onion, celery and potatoes can liao....

my grandma used to tell me that good food takes hours to make but minutes to finish... -
some recipes are easy to make...
good soup takes hours...
good sauces too...
but stir-fry, takes just a while

i like cooking.. with proper equipment
but then, i also enjoyed cooking with makeshift utensils when i was in uni
the other guys couldn't cook to save their lives so they cleaned and washed up

same weather. it's been raining heavily this week. so cold at my office..that why now i'm craving for someone lor..not food..he..he.. someone to hug.

Jellyfish
rinse the jellyfish in cold (cold not tap) running water and drain
put it in a bowl an pour in boiling water.. cover
allow to soak in the water for about 15 minutes or until it is soft.. (be careful not to overdo this, else there will be no texture whatsoever)
drain and then dunk into cold water to soak at least 6 times in several changes of cold water (keep changing the cold water to make sure the temp of the water is cold)
take out and drain thoroughly and blot dry with paper towels and set aside
can shred already
Sauce
1 jar of plum sauce
a dollop of sweet chili sauce (can use Sinsin Chili Sauce)
a touch of vinegar (about a teaspoon or 2)
finely chopped coriander (a few sprigs will do)
some sugar (a teaspoon or 2)
toasted sesame seeds (up to you)
a drop or 2 of sesame oil
just mix everything together.. keep separate from the jellyfish... refrigerate.. the amounts, uhh.. gotta go with trial and error as they are approximate amounts.. modify to taste when mixing
Serving
simplicity itself... just scoop the sauce into the jellyfish and mix.. lump the lot into a plate and serve -
