Actually with most modern sport or sport-touring tyres, its pretty much possible for street riders to "hang-off" their bikes & scrape their kneesliders on the track. We won't ride as fast as the Pros though.

Yupz, there's definitely a big difference between race slicks & street tires. Many rubber compounds to choose from, different temperature settings, different tires for different tracks, etc. Lots of science & lots of money involved.
Let's take the MotoGP 125cc race at Sepang, M'sia. The winner, Arnaud Vincent on his Aprilia, had an average speed of 147.785kmh. This isn't very fast to compare but what the Pros r superbly good at is keeping a constant, smooth riding plus high cornering speeds. This is what wins a race.
Though the bike might share the same name/number, this doesn't mean they're the same bike. The level of technology used on the factory bikes are simply too advanced compared to our street models. Besides, in order to be legal & imported into countries, street bikes must pass power output limits, exhaust emission content controls, etc.
The MotoGP races are shown on cable but I'm afraid the MotoGP season for this year ended at Valencia. Next year's season begins in the month of April.
